These crabby cream puffs are not just for graduation - any celebration or party where you want upscale munchies will do. Made the way you make cream puff pastry, these have the same consistency but rather than filled with cream, the crab and seafood seasoning are folded in and become part of the puff. Make them ahead, freeze, then reheat at party time for easy entertaining.

Makes about 48 puffs

Ingredients

1 C water
½ C butter
1 C flour
4 eggs (room temp)
¼ cup minced green onion
4 teas. Old Bay seasoning
8 oz. crab meat

Directions
  1. Preheat oven to 425°F. Layer cookie sheet with parchment and spray.
  2. Bring water and butter to a boil in a heavy saucepan. Pour in flour and blend well, beating over the heat until you see a film on the bottom of the pan (about 2 minutes).
  3. Remove from heat - let cool a few minutes, then beat in eggs, one at a time. Batter should slide off spoon easily.
  4. Mix in onion, seasoning and crab meat. Using a spoon, drop 1" balls of mixture onto cookie sheet (they can be close together).
  5. Bake 15 min., then turn off oven and allow to dry in oven another 10 min. Try not to open oven.

May be frozen after baking and cooling. Reheat at 350°F for 10 min. and serve hot.

Optional Dipping Sauce: ½ cup mayo, ½ cup plain yogurt, 2 Tablespoons Dijon mustard, blended.


Party Time Egg Salad Sandwiches

Makes 20 sandwiches

Ingredients

10 miniature croissants
7 hard-boiled eggs to make egg salad
Fancy toothpicks
Cherry tomatoes, small berries or fruit
Directions
  1. Slice croissants half horizontally. Make egg salad: peel/chop eggs; add enough mayo and flavored salt to make a nice salad. Fill each croissant with 3 T egg salad.
  2. Slice filled sandwiches in half vertically. Pierce with a fancy toothpick and a piece of fruit or grape tomato.
  3. Can be made a day ahead/ wrapped and refrigerated until party time.

Refrigerate leftovers that haven't been left out for more than two hours.


Deviled Egg 'Shots'

Hard-boil, peel, and slice eggs in half vertically (opposite the way you usually do). Prepare as you would your favorite deviled egg recipe and fill. When it's time to serve, place each sitting in a shot glass, placed on a platter. Garnish eggs with caviar or a cooked shrimp for an extra special treat!
