Probably the simplest and fastest way to feed a group of hungry folks. Everyone loves tacos, and usually there are a few taco shells sitting in the cupboard. Then all you need are some eggs and whatever toppings you have on hand that'll 'dress it up'. This is a super easy cooking project for young cooks - just teach them not to touch the hot surface with their hands and to clean up when they're finished, and you'll be thrilled that it's something they can fix for themselves. No taco shells? By all means, use corn or flour tortillas. One egg fills a small corn tortilla or small taco shell. If the shells or tortillas are larger, fill with two eggs. The neat thing about this is everyone gets to choose their own toppings so it's a win-win when it comes to a quick, tasty, healthy dinner, that everyone will enjoy - and corn tortillas and taco shells are gluten free, so it'll work for those folks as well. And honestly, they're the best for midnight or afternoon snacks, as well, so get crackin'!
