Avocado BLT with Fried Egg and Hot Mayo

Makes 2 sandwiches

Everyone loves BLT sandwiches, and we've really taken this one up a notch with the addition of a fried egg and some sliced avocado. The hot mayo is an unexpected layer of flavor that can be as intense as you want it to be, using whatever heat you have in the kitchen cupboard. This makes a wonderful mid-morning breakfast, a satisfying lunch, or a fun Sunday night dinner.

Baked French Fries
Ingredients

Hot Mayo: ¼ cup mayonnaise plus (Sriracha sauce; chopped chipotle chili in adobo; chopped hot green chilies; Texas Pete; etc.) to taste
2 eggs, fried (we use cooking spray in a non-stick skillet)
4 slices artisan bread*, lightly toasted
2 handfuls lettuce (we prefer Romaine)
1 ripe tomato, sliced
Pepper and salt to taste
6 strips bacon, cooked until crisp, patted dry
1 avocado, sliced
Instructions

  • Prepare the hot mayo.
  • Spread on two slices of toast.
  • Fry the eggs over medium heat until nearly firm, flip if desired.
  • Assemble the sandwich.
  • Slice and enjoy.

* Artisan bread is the term used for hearty loaves with firm crusts. They can be purchased in specialty bread shops that will slice them for you or in deli sections of most supermarkets. Any regular bread can be substituted.
