Makes 2 sandwiches
Everyone loves BLT sandwiches, and we've really taken this one up a notch with the addition of a fried egg and some sliced avocado. The hot mayo is an unexpected layer of flavor that can be as intense as you want it to be, using whatever heat you have in the kitchen cupboard. This makes a wonderful mid-morning breakfast, a satisfying lunch, or a fun Sunday night dinner.
| Hot Mayo: ¼ cup mayonnaise plus (Sriracha sauce; chopped chipotle chili in adobo; chopped hot green chilies; Texas Pete; etc.) to taste |
| 2 eggs, fried (we use cooking spray in a non-stick skillet) |
| 4 slices artisan bread*, lightly toasted |
| 2 handfuls lettuce (we prefer Romaine) |
| 1 ripe tomato, sliced |
| Pepper and salt to taste |
| 6 strips bacon, cooked until crisp, patted dry |
| 1 avocado, sliced |
* Artisan bread is the term used for hearty loaves with firm crusts. They can be purchased in specialty bread shops that will slice them for you or in deli sections of most supermarkets. Any regular bread can be substituted.
