Five Minute Mashed Banana Bread

In a hurry for something to serve unexpected guests? Need to send something to your child's teacher? Weekend or holiday company coming, and you know you'll need something to nosh on? Going visiting and need a take-along gift? Or just have to get rid of those overripe bananas in the fruit bowl - the ones attracting fruit flies? Here's the answer - you use the age-old quick pound cake recipe: Cake mix + instant pudding + 4 eggs + oil + water but this time you add some mashed-up bananas and whatever chopped nuts you have on hand. Five minutes to mix and get into the oven and 40 minutes later, you have two loaves of amazingly delicious banana bread (and the fruit flies seem to have disappeared!). And it's even better, because it makes one for me and one for giving - now that's our kind of recipe!

Ingredients

1 box yellow cake mix
1 pkg. Banana Cream Instant Pudding and Pie Filling
½ cup water
½ cup vegetable oil
2 ripe bananas, mashed (about 1 cup)
4 eggs
1 cup chopped pecans or walnuts (opt.)
Instructions

Mix all the ingredients well. Pour into two 4x6”, greased* loaf pans. Bake at 350° for 40 - 45 minutes.

*Try lining the loaf pans with parchment - a piece going each way and ends hanging out. Spray, pour in batter, bake, then remove and your pans are still clean - what a break!

**For giving: Wrap in parchment paper and tie with a fancy string or a simple bow. To be extra fancy, attach a small kitchen gadget (new measuring spoons, small spatula, whisk, etc.) to the bow. Place it ready to go in a large zip-up bag and store in the freezer until it's time to gift someone.
