Garlic Chicken Bites

Serves 4

These make wonderful appetizers, or a main dish if you eat a lot of them. Accompany with sweet corn, deviled eggs and fruit for dessert, for a great summer menu

Garlic Chicken Bites
Ingredients

1 pound boneless, skinless chicken breasts cut into bite-sized pieces
¼ cup olive oil
½ tsp. granulated garlic
¼ tsp. black pepper
2 eggs, beaten
½ cup breadcrumbs
¼ tsp. cracked, red pepper (or more!)
Directions

  1. Combine chicken pieces, olive oil, garlic and black pepper in a zip-top bag and refrigerate for 30 minutes.
  2. Preheat oven to 475°
  3. Beat eggs in one bowl and combine breadcrumbs with cracked, red pepper in another medium bowl. Remove chicken pieces from marinade and dip each in the beaten egg, then dredge in the breadcrumbs.
  4. Lay on a sprayed baking sheet in a single layer. Bake for 15 minutes; turn chicken and bake another 5 minutes until golden brown. Serve on picks in dipping sauce.
Dipping Sauce:

10 tablespoons spicy barbecue sauce *
*If you don't have spicy barbecue sauce add some hot sauce to regular barbecue sauce for an extra kick.
