Baked French Fries

Love French Fries, but know they aren't the healthiest side dish? We took the 'fry' out - there's no fat in this recipe that'll be your new go-to way to serve potatoes. We love to fix them using sweet potatoes or Yams as well. Wondering what to do with leftover yolks? Tuck in the fridge and use within a few days in Pasta Carbonara (toss raw yolks with hot, cooked pasta, drizzle on some olive oil, add a sprinkling of Parmesan and enjoy) or freeze with a bit of salt (for savory dishes) or sugar (for desserts) and use when needed in recipes - NEVER throw them out!

Baked French Fries
Ingredients

4 egg whites*
Salt
Paprika
2 large baking pottoes or Yams
Canola oil cooking spray
Directions

  1. Preheat oven to 425°
  2. Whip egg whites until foamy. Blend in salt and paprika and place in a bowl.
  3. Scrub potatoes. Leaving skins on, slice in half, then into ¼ - ½” thick slices.
  4. Dry with paper towels and coat in the beaten egg whites. Place on a cooking oil sprayed baking pan.
  5. Bake about 20 minutes, flip 'fries' over, spray with cooking oil and bake another 15-20 minutes or until crisp.
  6. Enjoy while hot and crispy.
  7. For a fun way of serving, cut squares of parchment, line wine glasses, then tuck in the fries.

* Separate eggs when cold. If a tiny bit of yolk gets in, no worries in this recipe, as it's not being whipped like meringue.
