This is a great idea for a family - it's a take on the traditional dish, Huevos Rancheros, which is usually prepared individually - this makes up into a casserole that can serve 6. Good thinking!
1 pound Chorizo sausage |
2 orange bell peppers, diced |
1 small Jalapeno, from a jar - diced |
1 - 15 oz. can black beans, rinsed and drained |
8 - 10 corn tostadas (crisp corn tortillas) |
1 - 10 z. can Enchilada red sauce |
1 1/2 cups shredded Mexican cheese |
6 eggs, fried, over easy |
Sauté Chorizo until half cooked, then add orange pepper and Jalapeno and cook through. |
Add black beans and heat thoroughly. |
Layer half the tostadas, half the Enchilada sauce, half the meat mixture and half the cheese in a 2 qt. baking dish (sprayed). |
Continue layering ingredients, ending with the cheese. |
Bake in 350°F oven for 15 minutes until bubbly hot. |
Meanwhile, fry 6 eggs, over easy. Gently lay on top of casserole after baking. Whites of eggs should be opaque and yolks nearly solid. |
Garnish with diced onion and peppers. |
